The abundance of fruit and vegetables here in Provence makes my fairytale mind imagine I live in the Garden of Eden. One thing I love most about my Provencal lifestyle is going to one of the many farmer's markets to buy my produce. Before I moved here, I had never eaten white asparagus. In Provence, you can find three types of asperges: green, violet, and white. The way the asparagus is grown makes the difference. The white ones are grown underground in rows of mounds covered with a white tarp. They never see the sun. Here is in this picture you can see the violet tips which means they were harvested just as they peeked their heads up to the sun. Bring this heavenly bounty of asparagus into your home.
